Look at My Fancy Balls!

Anyways, although I didn't post the next day, I did make these the day after my last post... Just had a hectic schedule and no time to post :( 


Check out my balls! Cake balls, that is. I used the leftover pieces of the french vanilla cake and my leftover strawberry cake (since there wasn't enough french vanilla cake...) and mixed them with some dulce de leche. Rolled them into balls, rolled them in unsweetened coconut flakes and put them in the fridge to harden (side note: every time I read the word "harden", I think of.... METAPOD! :P )


The sauce that goes with my cake balls is a mango and pineapple puree. I took fresh mango and pineapple, chopped them up, then blended them. Then I put the blended mix through a strainer so I didn't end up with any chunks. Mixed the puree with some lime juice for a bit of zest and to soften up the puree, and voila! Coconut covered cake balls with mango/pineapple puree :) 

Very simple and something to do with all my leftover cake!

EPIC KIRBY CAKE!!

You read it, and it's exactly as it sounds. An epic Kirby cake. Strawberry cake mix, strawberry frosting, pink colored fondant and GO! Adventure begins at 7:30... ish... Bruins game was on... distracted a bit. They won at least, probably in anticipation of this awesome cake - probably not.  Amazing silicon 9" pan, sprayed down with cooking spray and filled with the most delicious smelling cake mix ever...  BCD trimmed down the sides after the cake was done baking - going for an eagle's eye view. Frosted with strawberry frosting and placed in the fridge. Not the prettiest thing in the world... but look at how much room I made in the fridge!!  These next few pictures are of us shaping the second strawberry cake into Kirby's limbs - I did the hands while BCD worked on the feet. Let's just say.. cutting a cake into the shape we want it to be isn't as easy as we hoped.  That's my partner in crime, BCD!! NOM NOM NOM!!  N

Easter Sunday Cupcakes

For this upcoming Easter Sunday, I've decided I want to do cupcakes instead of cake. For one, cupcakes are always easier (or so I thought) and you don't have to cut them (this part IS true).  To accomplish this "little" task, I made two grocery trips on different days because let's face it, I would like a crazy person with what I was buying - including 3 jars of pickles because I love pickles.  Above is my "work station". As you can see, I had no more room on the table for everything so the chair beside me turned into a table. Included in my shopping spree for this cooking fun are airheads, variety pack of Twizzlers, Easter colored M&Ms, Rainbow sour strips (whatever they're called...), 3 different kinds of marshmallows (they have flavored yellow and green marshmallows! I think lemon meringue and lime something... I would have to check but I don't want to leave my bed..), flower sprinkles, pink sprinkles, chick peeps, Starbursts

Lifting Cakes

My hubby's sister's hubby turned 30, so she asked me to make a cake - Yay!! She mentioned his current obsession with Butterfingers, so a chocolate peanut butter cake it is!  I ended up baking six cakes in total - the first batch wasn't thick enough, so I doubled up on the amount of batter the second time around. So many cakes!!!  The theme this time around is weights, so a dumbbell is perfect!  These are my first two cakes, which I ended up crumbling up and making cake balls with them :)  Peanut butter frosting! So easy and delicious :) Just peanut butter, cream cheese, butter, a bit of vanilla extract and some powdered sugar! I made a double batch here and then another one for the cake balls. I decided to not microwave the marshmallows this time around to get a smoother texture with the fondant. Added a bunch of black food coloring. And then the powdered sugar!
